Vacuum sealing is not the only shelf life or food safety protection provided in a real MRE.  It's the multi-layer retort pouch itself, which is not a civilian retail item. 

 

I assume you are also aware that MRE stands for Meals Ready to Eat and that the sources of new and legit MREs are from contract manufacturers of military food who sell from deliberate inventory overruns they must always continue in order to be sure they can always meet their changing current ordering limits.  I would be hesitant to describe the approach you describe as resulting in MREs as opposed to simply one "homemade" way to try to stockpile some extra food, although it's always good to hear people are thinking ahead and trying to prepare.

 

Also, people need to be aware that most "MREs" sold in surplus stores are NOT fresh, and that furthermore, there are unethical suppliers in the marketplace that will engage in deceptive practices.  For instance, at least one such supplier in the Southern California area often buys cases of non-fresh MRE entrees and repackages them as "MRE full meal packs", using nothing for the extras around the main dish (e.g. crackers and cheese) but regularly packaged bulk snack items like anyone can buy from Costco and similar sources.  So these other foods don't have any additional inherent shelf life than normal, and the outer packaging this supplier uses sometimes looks the part, but is actually not retort, so there's no gain there either. 

 

In short, it's good to be a wise consumer if one is looking for the real thing in an MRE.
